Everyone loves pizza, but you can’t get it delivered up here. When your taste (or your kids) demand pizza, here’s a fairly quick and definitely easy solution. It’s infinitely adjustable, so match your family’s preferences for toppings and seasoning.
Ingredients:
1 1/2 pounds lean ground beef or ground turkey (or eliminate if you have enough other toppings)
Italian seasoning (oregano, basil, garlic powder) to taste.
1 (15 ounce) can or jar pizza sauce
1 (4 ounce) can sliced mushrooms, drained, or 6 oz. fresh mushrooms, sliced (optional)
Sliced yellow or white onion (optional)
1/2 green pepper, sliced (optional)
1/4 cup sliced pitted ripe olives (optional)
1 cup shredded mozzarella cheese, or more to taste
1 (10 ounce) can refrigerated biscuits
Grated Parmesan cheese (optional)
Instructions:
Preheat the oven to 400 degrees. Grease a 2-quart casserole.
Heat a large skillet over medium-high heat. Cook and stir meat and other raw toppings (mushrooms, onions…) in the hot skillet until browned. 5 to 7 minutes. Add Italian seasoning, salt, and pepper to taste. Drain and discard grease.
Stir sauce, and toppings into meat in the skillet. Cook and stir until heated through, about 2 minutes. Transfer mixture to a 2-quart baking dish (or leave in the skillet if it’s oven-proof—saves a dish.) Sprinkle with mozzarella and Parmesan cheese.
Flatten each biscuit with your hands and arrange on top of cheese.
Bake in the preheated oven until biscuits are golden, 15 to 17 minutes.
