Sloppy Joe Cornbread Casserole

 This super easy dinner changes up the old familiar Sloppy Joe with a cornbread topping rather than a bun to set off the savory filling. Make it even easier by substituting two 8.5 packages of Jiffy cornbread mix (or any mix that adds up to about 16 ounces) for the homemade cornbread. From Cooking Curiosity.

 

Ingredients

For the Sloppy Joe Filling:

1 pound ground beef

1 small onion, finely chopped

1 green bell pepper, finely chopped

2 cloves garlic, minced

1 cup ketchup

1/4 cup tomato paste

2 tablespoons Worcestershire sauce

2 tablespoons brown sugar

1 tablespoon yellow mustard

1 teaspoon chili powder

Salt and pepper, to taste

For the Cornbread Topping:

1 cup yellow cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/4 cup vegetable oil

1 large egg

Instructions

Preheat your oven to 400°F. Grease a 9×13-inch baking dish.

In a large skillet, cook the ground beef over medium-high heat until browned and cooked through. Drain any excess fat. Add the chopped onion, green bell pepper, and minced garlic. Cook for about 5 minutes, until the vegetables are softened.

Stir in the rest of the filling ingredients. Reduce the heat to low and let the mixture simmer for 10 minutes, stirring occasionally.

In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, combine the milk, vegetable oil, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Or, prepare your cornbread mix.

Spread the Sloppy Joe filling evenly in the prepared baking dish. Pour the cornbread batter over the top of the filling, spreading it out evenly.

Bake for 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
