Ingredients:
2 lemons, sliced into thin rounds
1/2 to 1 whole zucchini, sliced into rounds
1 pound mahi mahi fillets
2 Tablespoons butter, melted
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon red pepper flakes
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
2 Tablespoons finely chopped cilantro or parsley
Instructions:
-Preheat the oven to 400 degrees F.
-Lay the lemon and zucchini slices on a 9x13 baking dish so the mahi mahi can sit on top of them.
-Place the fish on top and brush them with the butter on both sides.
-Combine the paprika, garlic powder, oregano, salt, red pepper flakes, onion powder, and black pepper in a small bowl. Stir and sprinkle over the fish, coating both sides with seasoning.
-Bake the fish for 12 minutes, then broil on high for 2 minutes.
-Remove from the oven and top with cilantro (or parsley). Serve immediately.
