Who doesn’t love a good mashed potato?! This easy-tomake mashed potato dish is perfect for lunch, dinner, or to share during a gathering.
Ingredients:
2 16 oz packages dehydrated potatoes, prepared
2 eggs
1 cup shredded cheddar cheese
2 lbs pork taco meat
1 can corn, drained
1 can refried beans
1/2 cup chopped onion, optional
1 seeded and chopped jalapeño, optional
Directions:
Preheat the oven to 375 degrees.
Combine mashed potatoes, eggs, and 1/2 cup cheese, set aside.
Empty pork taco meat, drained corn, refried beans, chopped onion, and jalapeno into a 9”x13” casserole dish and mix.
Add potato mixture to the top.
Top with an additional cup of cheese.
Bake for 25-30 minutes until the cheese is melted & bubbly.
